Makes 4 dozen (48 servings)
Ingredients
- 1/2 cup butter, softened
- 1/2 cup butter, melted
- 1 1/2 cups white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
- 1 2/3 cups all-purpose flour
- 1 cup cocoa powder
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 cups semisweet chocolate chips (or 1 10oz bag of
chips)
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In large bowl, beat butter, sugar, eggs, vanilla, and
almond extract until light and fluffy. Combine the flour,
cocoa, baking soda, and salt; stir into the butter mixture
until well blended.
- By hand (with a sturdy spoon), mix in the chocolate
chips.
- Drop by rounded spoonfuls onto ungreased cookie sheets. The
cookies are rich, so don't make them too huge.
- Bake for 11 - 12 minutes in the preheated oven, or just
until set. Cool slightly on the cookie sheets (about 5 minutes)
before transferring to wire racks to cool completely. If cooked
just right, they should still be soft the next day.
Variations
- Peanut-butter chip cookies: half the amount of chocolate
chips, and add a bag of Reese's peanut-butter chips; add an
extra teaspoon of salt
