Grilled Sweet Potatoes with Lime Vinaigrette
- 4 lb. sweet potatoes (8)
- 1/4 cup fresh lime juice
- 1 1/2 teaspoons kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
- 1/4 cup chopped cilantro (optional)
Directions
- Cover potatoes with cold, salted water, then bring to a
boil.
- Simmer until slightly resistant in center when pierced with
a sharp knife (about 25 minutes)
- Transfer to a large bowl of cold iced water to stop
cooking
- When cool enough to handle, peel and quarter
lengthwise
- Prepare the grill for cooking
- In a blender (or hand whisk), whisk the lime juice, salt,
and pepper, adding the oil very slowly to form an
emulsion.
- When fire is hot, lightly oil the potatoes, and grill in 2
or 3 batches for about 5 minutes
- Serve potatoes warm or room temperature, and drizzle with
vinaigrette
