Grilled Sweet Potatoes with Lime Vinaigrette

Directions

  1. Cover potatoes with cold, salted water, then bring to a boil.
  2. Simmer until slightly resistant in center when pierced with a sharp knife (about 25 minutes)
  3. Transfer to a large bowl of cold iced water to stop cooking
  4. When cool enough to handle, peel and quarter lengthwise
  5. Prepare the grill for cooking
  6. In a blender (or hand whisk), whisk the lime juice, salt, and pepper, adding the oil very slowly to form an emulsion.
  7. When fire is hot, lightly oil the potatoes, and grill in 2 or 3 batches for about 5 minutes
  8. Serve potatoes warm or room temperature, and drizzle with vinaigrette
