Oatmeal Raisin Cookies

Instructions

  1. Heat oven to 350°F; In large bowl, beat margarine and sugars until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
  2. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
  3. Bake 12 to 16 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

VARIATIONS:

  1. Stir in 1 cup chopped nuts.
  2. Stir in 1 cup choc. chips; halve cinnamon
  3. Substitute 1.5 cups semisweet chocolate chips or candy-coated chocolate pieces for raisins; omit cinnamon.
  4. Substitute 1 cup diced dried mixed fruit.
