Easy Decadent Truffles

Ingredients
- 1 (8 ounce) package cream cheese, softened
- 3 cups confectioners' sugar, sifted
- 3 cups semisweet chocolate chips, melted
- 1 1/2 teaspoons vanilla
Optional
- 2 teaspoons of your favorite liqueur or extract. I've tried or suggest:
- Cointreau or Grand Marnier and some orange zest
- Malibu Rum or coconut extract
- amaretto or almond extract
- walnut extract
- vodka
- items to roll the finished truffles in, like:
- coconut
- cocoa powder
- powdered sugar
- crystallized sugar + cinnamon + red pepper
- candied ginger
- crushed nuts (almonds, pecans, etc.)
- sesame seeds
Directions
- Start melting chocolate in a bowl over a pot of boiling water (bowl should NOT touch the water)
- In a large bowl, beat cream cheese until smooth.
- Gradually beat in confectioners' sugar until well blended.
- Stir in melted chocolate and vanilla until no streaks remain.
- Refrigerate for about ½ hour.
- Shape into 1 inch balls.
Variations
- Try replacing vanilla with other flavorings; up to 2 or 3 teaspoons can be safely added without ruining the truffles
- Try halving the mixture before adding flavoring to make two small batches
